Why it tastes different

Honey the way the bees made it

Nothing added, nothing taken out. Just honey that is gently strained and jarred while it still smells of the field.

The apiary

Forty hives, one wildflower valley

Our family has kept bees at Hollow Oak for three generations. The hives sit among clover, linden and wild thyme, far from crops and roads. We only take the surplus honey, leaving the bees plenty for the winter.

  • Family beekeepersThree generations caring for the same hillside hives.
  • Bees firstWe harvest only the surplus and never feed sugar syrup.
  • Harvested twice a yearA light spring honey and a richer late-summer jar.

From hive to jar

Four slow steps, no shortcuts

  1. 1

    Forage

Our bees gather nectar from wild clover, thyme and linden all season long.

  2. 2

    Cap

We wait until the bees seal each cell with wax, the sign the honey is ripe.

  3. 3

    Spin

Frames are spun cold by hand, then the honey rests so air bubbles rise.

  4. 4

    Jar

Poured into glass jars, labelled with the harvest date and shipped to you.

Good questions

Everything about our honey

Why has my honey gone thick or cloudy?

That is crystallisation, a natural sign of raw honey with its pollen intact. To make it runny again, stand the jar in warm (not hot) water for a few minutes and stir.

How long does it keep?

Honey keeps for years when the lid is closed and the jar is stored at room temperature, away from direct sun. We print a best-before date two years after harvest.

Is it suitable for children?

Honey of any kind should not be given to babies under 12 months. For older children and adults it is a lovely everyday sweetener.

How does the Harvest Club work?

You pay once for six jars. We send two jars from each new harvest, three times through the year, and you can move a delivery date by replying to any email.

When will my order arrive?

Orders are jarred and shipped within 24 hours on weekdays and usually arrive in 2 to 4 business days, carefully padded so the glass stays safe.
